What the sausage is
Fresh Brazilian-style sausage, made for the grill, the feijoada or a weekend breakfast. It is sold fresh from the counter rather than pre-packed in bulk, and the chicken version is the one in the video. As with everything at the counter, what is out on a given day follows what came in with the delivery.
How to cook it
Fresh sausage does better with medium heat and a little time than with a hard, fast sear that splits the casing. On a churrasco, keep it off the hottest coals and turn it often. In a pan, start with a splash of water and a lid so it cooks through, then finish uncovered to colour the outside.
Ask before a special trip
